Topics include career opportunities, breed identification, anatomy, oral and written livestock class placing, production records used in evaluation, and grading livestock and carcasses. Objectives To acquaint students with employment information and career opportunities in the areas of livestock judging and grading To provide students with instruction and practice in identifying various livestock breeds To develop student appreciation for the value of livestock judging skills To instruct students about the characteristics of an exemplary livestock judge To provide students with instruction and training in examining and placing animals and in giving reasons for class placing To provide students with opportunities to practice livestock judging skills To develop student understanding of livestock and carcass examination and grading Competencies At the conclusion of this unit, students will be able to explain current employment information such as job descriptions, job availability, personal and educational requirements, working conditions, opportunity for advancement, and other factors relative to potential employment in evaluating and selecting livestock and relate it to their personal needs and aspirations; identify and compare the characteristics of the various beef breeds; identify and list all parts of an animal in each species; place classes of animals using type as the criterion for evaluation; use a systematic approach in giving oral and written reasons for a class placing; place a class of livestock using production records as the criterion for evaluation; and grade market classes of livestock and carcasses according to muscling and finish.
