Now available! Nutrient Analysis Protocols: How to Analyze Menus for USDA's School Meals Programs (NAP Manual)
 

The NAP Manual assists the school nutrition professional and State agency with the process of obtaining an accurate nutrient analysis of menus using a USDA-approved software program. It provides guidance for calculating the nutrient analysis of menus offered in the National School Lunch Program and School Breakfast Program. This manual is designed to help you to plan and execute your nutrient analyses from the ingredient to the recipe to the menu level.

The NAP Manual is divided into 7 chapters and includes a glossary and resource list:

  • Purpose of Nutrient Analysis and Introduction to Dietary Specifications
  • Selecting Software for Nutrient Analysis
  • Overview of Conducting a Nutrient Analysis
  • Preparing for a Nutrient Analysis

Lifecycle of Farm to School Training: Register Now!

 


The DPI School Nutrition Team’s USDA Farm to School Grant project, the Lifecycle of Farm to School, is growing! The goal is to help school food authorities (SFAs) across Wisconsin begin or expand school garden programs, increase the sustainability of local foods in school meals and build each school’s Farm to School team. The workshops will give you the skills, resources, tools, and connections to carry a school garden from planting to harvesting, from June into school meals in September. No prior experience or workshop attendance is required and you can attend as many of the upcoming sessions as you choose.

 

The third workshop in our Lifecycle series, Garden Maintenance, will feature expert guidance on each aspect of caring for your school garden, supportive group discussions, time to trade information and ideas with other SFAs, food safety and self-care tips, and a celebration of Wisconsin School Garden Day! Join us for fun, laughter and garden talk while gaining confidence in your school gardening plans.

The Garden Maintenance workshop is being held virtually via Microsoft Teams on May 18 from 1:30-4:00pm. Please Register in Advance. The Lifecycle training series is designed for food service directors, yet any person who manages school gardens or the farm to school efforts at your SFA is welcome to attend!

 

The fourth workshop, Harvesting, is being held IN PERSON from 10 AM - 2 PM on June 22, after the SNA-Wisconsin Conference, at Bay Port High School in the Howard-Suamico School District. This workshop will feature a tour of the farm, hoop house, and school garden used at the district. We will learn how to harvest the vegetables you have worked so hard to grow in your school gardens and will also eat a meal with the foods we harvest together. Please Register in Advance. Space is limited and priority will be given to Food Service Directors and staff at Wisconsin SFAs.

Virtual Instructor-led Trainings (VILTs): 2022 Summer Sessions
 

The Institute of Child Nutrition (ICN) is offering virtual training sessions during the summer of 2022. There are topics available for school nutrition professionals and Child and Adult Food Care Program (CACFP) operators. Many topics are scheduled for new child nutrition directors and the list also includes lessons from Introduction to School Nutrition Leadership (ISNL).
